WOW you gotta to taste this!  It is better and healthier than Velveeta or that cheese thing in the can.  In this recipe video from Veria Living Chef Ann Gentry prepares a delicious and simple dairy-free cheddar cheese. The secret ingredient? Cashews! 
Non-Dairy Cashew Cheddar Cheese Ingredients: 1 1/4 cups raw cashews 1/2 cup nutritional yeast (available in health food stores) 2 teaspoons onion powder 2 teaspoons sea salt 1 teaspoon garlic powder 1/8 teaspoon ground white pepper 3 1/2 cups plain soy milk 1 cup (about 1 1/2 ounces) agar flakes (a vegetarian gelatin, available in health food stores) 1/2 cup canola oil 1/4 cup yellow miso (fermented soybeans, available in health food stores) 2 tablespoons fresh lemon juice

      Yep, I was shocked, but maybe it was because of the nutrional yeast and the miso combination and in my case I used soy Lecithin which has it’s own nutty flavor, but even with eyes wide open, it does…Don’t knock if you have tried it. JBC 8-)

        It sure sound it has stupendous possibilities that’s why I wondered if a cheese loving person like me can be fooled. I don’t mind being fooled if its good. :-D

        Well I must agree. I can still taste the NY Cheddar cheese my mom and I would get at Macy’s in the 70’s. So skepticism is a good thing! JBC 8-)
